Delicious pita bread pizza
Written by Tanya ZuckerbrotWho can resist pizza? It’s a classic, quick meal or snack the entire family can enjoy. Once the craving hits, it’s hard to resist. But since one regular slice can cost up to 400 calories and 10 grams of fat (with 0 grams of fiber!), I decided to do something about it.
I came up with an easy recipe makeover solution. I hold the greasy meats and replace the white dough with whole wheat pita for added fiber and antioxidants. Put some veggies, low-fat cheese, and lean chicken on top, and you’ve got a homemade personal pizza just as irresistible as the one from the pizza shop!

Roasted Garlic, Spinach, and Tomato Pita Pizza
Time: 30 minutesServes: 6
Ingredients:
- 1½ teaspoons olive oil
- 2 cloves garlic, chopped
- ½ pound chicken breast, cut into bite-sized pieces
- 2 cups frozen, chopped spinach, thawed
- 3 whole wheat pitas
- 1/3 cup shredded low-fat mozzarella
- 1/4 cup grated Parmesan
- 6 slices of tomato
- Fresh basil leaves
Cooking instructions:
- In a large skillet, heat the olive oil on medium heat and add the garlic and chicken. Sauté until chicken is cooked through. Add spinach and cook until just heated through. Set aside.
- Preheat oven to 475°F. Cut pita into halves, place on a baking sheet and layer ingredients. Start with tomato slices, then add the spinach and chicken mixture, followed by the basil, and finally the cheese.
- Bake pizzas for 10 minutes or until pitas are crispy and cheese is melted.

Per serving (1 pizza): 172 calories, 5 g fat, 2 g saturated fat, 11 carbs, 2 g fiber, 16 g protein, 324 mg sodium, 160 mg calcium

I made homemade pizza just the other day, everything from scratch. I used real whole wheat pizza dough, rolled very thinly (no thick crust), and put tomato sauce, mushrooms, 1 slice of Provolone, the real stuff, not low-fat (more satisfying, and only 70 calories) and bell peppers of all colours. I added lots of cayenne pepper because I love it spicy. Bake it on a pizza stone, and this, my friends, is the real deal - without pepperoni or white flour, thus guilt free!
