What better day than Earth Day to address one of our food supply’s biggest environmental concerns: mercury. Mercury from industrial pollution falls from the air into our streams and oceans, where it turns into methylmercury, and is absorbed by fish in different quantities. Tuna does have a fairly high mercury level , but it’s not the highest — that distinction falls to tilefish, shark, swordfish, and mackerel. We just hear a lot about tuna because it’s such a popular fish.
